Biography
Dr. Farnaz Maleky holds a B.Sc. degree in Chemical Engineering, M.Sc. and Ph.D. degrees in Food Science and is a faculty member in the Department of Food Science and Technology at the Ohio State University. Her research is focused on material science of food systems, particularly nano-engineering of fats and oils. Dr. Maleky develops mechanical/structural models that link micro/nano structural properties of polycrystalline fats to their macroscopic properties for better health benefits and sensory attributes of foods. Her research outcome is published in a format of numerous peer-reviewed journal/conference publications, book chapters and patents. Dr. Maleky is currently an active member for different committees of American oil Chemist’s Society (AOCS), and also serves as an associate editor of Food Research International.
